(More customer reviews)I originally had my eye on the T-Fal 3378100 Maxi Pro deep fryer but a recent series of bad reviews lead me to consider other options. Before buying a deep fryer I did a lot of research on the Internet and narrowed my focus to the following criteria:
Most capacity. Have you seen the inside of the small deep fryers? You'd be hard pressed to get even one potato worth of fries in those things. I really don't like working in batches as it makes it hard to time the meal so I wanted something that held A LOT. With over a gallon of oil capacity, it is the largest I've seen short of commercial models.
Temperature recovery. Once you drop the cold food into the deep fryer the oil temp will go down. How quickly the unit recovers makes the difference between soggy and crispy golden brown. With an exposed heating element I felt I got faster recovery and when I cooked fish the drop was only about 20 degrees and for a very short time.
Easy clean up. The frying vessel is stainless steel and goes inside the aluminum exterior you see. This is removable and has corners for easy pouring. It is also very nice that the cover, fry vessel and basket can be put in the dishwasher. The only part that gets dirty and needs to be cleaned by hand is the heating element.
HOT HOT HOT. Well, this is the only area where the unit let me down. The company says the maximum tempeature is 360 but I couldn't get anything over 345. The temperature is a little low but the food I made came out just fine. You may need to fry things for a bit longer but this is less hassle since the machine is automatic compared to an open pot on the stove.
I honestly think the only way to do better than this unit is looking to commercial equipment which is not feasible given a home environment. The unit performs well even when pushed to the limit (yes, I tried loading the thing up with a full 3 pounds) and is more convenient than a pot on the stove. I will admit that the unit is *very* simple. No electronic doodads, timers and the like. This is a good thing, however, since there is less to break and in the end the unit works for the reason you bought it.

The removable frying pot is great for clean up. Outer plastic really does stay cool. The old stainless fryers could burn you on contact. The oil does tend to splatter beyond the inner bowl onto the heating element, so odor is a small problem. Other than that, great value. Nothing like home made french fries!

When cooking with it you have to keep adjusting the heat as it won't hold an even tempature, one pan will get hot and the other too cold, you adjust it and it goes the other way, one reason for this is the paper thin pans that won't hold any heat. The directions for assembly are very scant. Again this fryer is junk, I will not recommend to anyone.

It can't keep the oil temp. up and will unexpectadly turn off and not be able to be turned back on for hours. The basket/handle combo are poorly constructed since the handle must come off to close the lid and it is extremely difficult to remove the handle. DO NOT BUY!

I used it on my stove's 16,000 BTU burner, but that has not been a problem for my other cookware. The fried chicken it produced was good, but I'm sure this pot can't stand up to heavy use. Buy it only for occasional use. If you plan to fry alot, buy a basket for your dutch oven or buy a commercial aluminum fry bottom/basket.

(More customer reviews)I got this fryer as a free gift! Upon opening the box I was not intially impressed with it.
But now that I have been using it regularly for some months and it does have some short comings.I dont think I will go back to frying the old fashion way with a pot and temp. gauge.I am considering buying a second one for frying pastries only.Below I have listed the pros and cons I have run into while using this fryer.
CONS:
1.The wire backet has a handle that is designed to distach from the wire basket.When dealing with HOT oil, this was an accident waiting to happened and not worth the risk.My solution was to take the wire basket to a welding shop and have the handle perminately welded to the basket!
2.The white lettering denoting the tempature settings ect. is not permanent. The first time I cleaned this fryer with just dishwashing washing liquid and water.The white lettering wiped right off, never to be seen from again!!!! I have'nt thought of a solution yet to replace the white lettering.Because the white lettering wiped off the first time I cleaned it I'm only giving this fryer 4 stars,else I would have given it 5 stars.
3.It takes 20 minutes to heat up to it's maximum tempature of 375 degrees.
4.This fryer has a break away electric cord.The kind that uses magnets to hold the plug in the socket.
I personally find this a nuisance.Because sometimes the cord will break away due to slight movement.

PROS:
1.Using a tempature gauge I was able to confirm that this fryer when set to it's maximum tempature of 375 degrees.Does in fact reach 375 degrees with no problem.So far I have used it to fry french fries,onion rings,chicken wings,country fried steak and it's done an excellent job on all of them.
2.This fryer has a timer.I have'nt found any other fryers less than $100 that have a timer.Even the table top commerical fryers that cost upwards of $400 dont have timers.Though I have never used it.I think it's good to have.Even the double tank version they sell dont have a timer.
3.It dismantles without tools easily, making it easy to clean.
UPDATE- 1/12/2011-This fryer used maybe only 3 or 4 times a month (only cooking for one person) lasted less than a year.

First time I used it, I accidently slightly over-filled with oil and it ran over when I lowered the basket with two fish fillets. No damage just a bit of a mess to clean up. Since then, no problems and I use it two to three times a week and it's great. Warms up fast and fries perfectly and I can re-use the same oil a few times saving some money.

It functions as described; capacity is great; holds its temp well; its good-looking; its not *too* bulky, tho it is a big fryer; drain plug is very useful; the filter system protects the kitchen from grease and keeps the grease clean and re-usable; it is also easy to take apart and clean thoroughly. The only negative on the machine itself is that the digital display is hard to read, but I had anticipated that issue based on reviews I read previous to my purchase. However, I was expecting a 're-conditioned' product based on the description from the seller. When the package arrived, the cookbook was literally DIRTY with food from a previous owner and the box had someone elses carpet fiber and hair stuck in the tape that sealed the box--very unprofessional on the part of the seller, I think. The fryer itself seemed unused, so I printed a new cookbook off the website, threw out the dirty box and I kept the fryer-- and I'm glad I did.

The reason that I give it only 4 stars tho, instead of 5, is because of the magnetized cord...it makes it very easy for someone like me with arthritis in my hands to plug it into the fryer but it also detaches very easily & unnoticebly, which makes me nervous because if its still plugged into the wall thats live electricity coming thru it, so i recommend that purchasers of this product be aware of this. Other than that one thing I believe anyone would be very pleased with it.

(More customer reviews)I love to deep fry food using canola oil. It's actually healthier and more certain than pan frying, especially when dealing with food that needs to be cooked thoroughly before eating, like poultry and fish.
I have a small round fryer that does a good job but it's a NIGHTMARE to clean. The oil reservoir is gritty, so everything sticks to it very well - a major annoyance. It's also difficult to dump the oil without spilling.
Enter this deep fryer. So far I've got no complaints, it's very easy to fry the food, and the basket is a very nice touch that my old fryer doesn't have. One minor nitpick is the basket I just raved about; I wish it were more "mesh" than "fence". Meaning I wish the holes were a lot smaller, so it would act as an effective crumb catcher. That would make the unit a lot easier to clean, and I can see how that might get to be a problem in time. But again, it's a nitpick of mine.
Update 12/28: Ok, I've got complaints. First, the filtering is poor. It will leave the smell of fried-whatever all throughout your place. I've got an el-cheapo $40 fryer that I replaced with this, and the cheap one does a better job of containing that odor. I know this is like some industrial-type stuff so it's to be expected, but I can't keep buying Oust like this.
Secondly, I was right about wanting the mesh. I've fried a couple of times and already there's a nice brown coating on the bottom. IT bothers me, because if they just went with a mesh-style basket I wouldn't have this problem.
Third, it takes WAY too long to heat up. I'd say plan on about 10-15 minutes prep time. Hate to beat a dead horse, but el-cheapo was hot in a matter of 3-5 minutes tops.
